Look inside your freezer and there’s bound to be something you can pair up with some leftover veg. Fish is a great healthy option, and experts recommend we eat two portions of fish a week. Tabbouleh is traditionally a salad from the Middle East that’s made with bulgar wheat, herbs and vegetables, this lentil twist is a great way of incorporating more veggies into your meal. No nutrients are lost in the fish during the freezing process either, and to make this dish even more balanced you can always serve up with a hearty crusty piece of bread.
